A Sizzling Father's Day: BBQ Recipes for a perfect day with friends and family.

Summer is here and what better way to celebrate Father's Day than with a good old-fashioned BBQ in one of our large holiday lets in the heart of the picturesque Wye Valley? All of our big holiday houses have BBQ’s in the garden so you can book any of them for next year to enjoy the day in splendour. When you plan it though don’t stick to just burgers and sausages, oh no. Let's elevate the traditional BBQ menu, incorporating the tantalizing flavours of the season.

1. BBQ Grilled Prawn Skewers

A prawn skewer will definitely add a fancy twist to your Father's Day BBQ.

Ingredients:

2 pounds of large prawns, peeled and deveined

2 cloves of garlic, minced

1 tablespoon of fresh lemon juice

1 tablespoon of olive oil

Salt and pepper to taste

Directions:

Combine prawns, garlic, lemon juice, and olive oil in a bowl. Season with salt and pepper. Let it marinate for about 30 minutes. Thread the shrimp onto skewers, then grill on medium heat for 2-3 minutes on each side, until they turn pink.

2. BBQ Grilled Veggie Kebabs

To cater to the vegetarians in the family, or simply to have a splash of colour and healthiness on the grill, these veggie kebabs are perfect.

Ingredients:

2 bell peppers, cut into chunks

1 large courgette, sliced

1 red onion, cut into chunks

8 cherry tomatoes

8 mushrooms

1/4 cup of olive oil

Salt and pepper to taste

Directions:

Thread the veggies onto skewers, alternating the types for a variety of colours. Drizzle with olive oil, season with salt and pepper. Grill on medium heat for 10-15 minutes, until the veggies are tender and slightly charred.

3. BBQ Grilled Peach and Prosciutto Pizza

Yes, you heard it right. Pizza on the grill! With the smoky prosciutto and sweet grilled peaches, this pizza is bound to be a hit.

Ingredients:

1 store-bought pizza dough

1/2 cup of pizza sauce

1 cup of mozzarella cheese, shredded

2 peaches, sliced

6 slices of prosciutto

A handful of fresh basil leaves

Directions:

Preheat the grill to medium heat. Roll out the pizza dough on a floured surface. Place the dough on the grill and cook for about 2-3 minutes until it's lightly charred. Flip the dough and spread the pizza sauce over it. Sprinkle with mozzarella, then top with peach slices and prosciutto. Close the grill and cook for about 5-6 minutes until the cheese is melted and bubbly. Top with fresh basil leaves before serving.

4. BBQ Pulled Jackfruit Sandwiches

A delicious, meat-free alternative that will surprise and please even the most ardent carnivore

Ingredients:

2 cans of green jackfruit in brine, drained and rinsed

1 bottle of BBQ sauce

1 onion, sliced

4 buns

Coleslaw for serving

Directions:

Pull apart the jackfruit into shredded pieces. In a pan over medium heat, sauté the onion until softened. Add the jackfruit and BBQ sauce, cover and simmer for about 20-30 minutes until the jackfruit is tender and the flavours are well combined. Load up your buns with the BBQ jackfruit and top with coleslaw.
